Whenever you think of Jersey Island, you think of endless beaches, tax free shopping, amazing cuisine and the famous Jersey cream teas. If you find yourself in Jersey, you will have trouble realising where exactly you are, on the continent or in the United Kingdom.

 

The French village’s names were in complete contradiction with the typical English pubs you can find there, that wear French names. The English manners but other French habits turn Jersey into a very special place. 

 

The Jersey inhabitants live by one of their famous sayings: “Better to pay the baker than the doctor”. Moreover, they take it literally; you can observe that by the large number of restaurants – 170- on a population of only 80 thousand people. Jersey Island is also famous for the annual International Food Festival that takes place in the heart of Jersey, Saint Helier’s Port.

 

The festival was originally known for Jersey cream teas and other traditional conservative foods, but nowadays it has crossed any possible boundaries.

 

Cooks from all over the world come to Jersey to exchange new cooking experiences and new tastes and flavors; it all starts in the Gorey port with a seafood delight and it goes further on with Irish, Thai, and Spanish chefs, wine tasting, street events, banquets and food stalls lined on the streets. Jersey managed to transform eating out from a rigid act into the most casual thing possible, people in Jersey are having fun while eating out and enjoy the good food, drinks, deserts, mix of people and other events.  

 

However, Jersey cream teas are still the main attraction of the island. Wherever you may go in Jersey, you will always find a coffee shop or restaurant that serves the specialty of the island: the Jersey cream tea. Due to the Jersey Cow Farm Foods, there are always fresh dairy products available; therefore, the cream for the tea and scones is fresh and prepared after a special Jersey receipt.  

 

When we refer to Jersey cream teas, we mean freshly homemade scones, real natural jam made from fresh fruits and a special fresh cream recipe. In order to ease your job we will provide you these famous recipes:  

 

Authentic Jersey Scone Recipe 

 

Ingredients
- 225g (8oz) of white flour
- one tea spoon baking powder
- a pinch of salt
- 25g (1oz) of sugar
- 50g (2oz) unsalted softened butter
- 150ml (/¼ pint) of fresh milk
- 1 egg beaten

How to prepare it:
- Firstly pre-heat the oven to 220C
- Mix the flour with the baking powder and salt into a pot. Throw in the sugar, next add the melted butter and rub quickly into the flour; you will have created a fine breadcrumrnb consistency.
- Add the milk little by little as working to a smooth dough.
- Leave this to rest for 5-15 minutes before start rolling it.
- Roll out the dough on the floured work surface until 2cm/¾in thick. Using a 5cm (2in) pastry cutter, slice the dough, using one sharp tap. By twisting the scone mix you will result in an uneven rising.
- Once the dough cut, the scones can be brushed with the beaten egg for a shiny glaze, or dusted with some flour for a matt touch.
- Put the resulted scones on a greased baking tray and bake in the pre-heated oven for 10-12 minutes until they turn golden to brown. Allow to cool a little but serve them while still warm.

- One of the finest and most famous cream recipies for Jersey cream teas consists in:  

- Four ounces of mascarpone 

- One cup (240 ml) of heavy cream ( for whipped) 

- One tea spoon of vanilla extract  

- One or two table spoons of regular sugar
- Zest of lemon/ lime
